Wednesday's Menu

Baked Mexican Chicken


Add a little southwest flavor to dinner with this easy recipe for Mexican chicken. Serve with warmed corn tortillas and a salad.


Ingredients:

6 boneless, skinless chicken breasts
1 package taco seasoning
1 can (10 ounce) enchilada sauce


Directions:

1. Spray a baking pan with nonstick cooking spray.

2. Place chicken in pan, sprinkle taco seasoning over chicken.

3. Pour enchilada sauce over chicken.

4. Bake at 350F for one hour or until tender.
