Wednesday's Menu

Turkey Parmesan

Made from turkey cutlets, this lighter Parmesan recipe is full of classic flavor. Pair with linguine and crusty rolls for a tasty, easy dinner any time of the week.


Ingredients:

1 pound turkey cutlets
1/2 cup Italian seasoned chicken coating mix
cooking spray
2 teaspoons olive oil
1 cup tomato basil pasta sauce
1/2 cup shredded Parmesan cheese



Directions:

1. Flatten turkey cutlets to 1/8 inch thickness with meat mallet or rolling pin.

2. Coat cutlets with seasoned coating mix.

3. Spray a nonstick skillet with cooking spray, add olive oil. Heat on medium-high heat until oil is hot.

4. Add turkey cutlets, cook 2 minutes on each side.

5. Heat sauce in microwave safe dish for 1 minute or until heated through.

6. Spoon sauce over turkey cutlets, sprinkle each cutlet with Parmesan cheese.
