Wednesday's Menu

I love a good casserole and this particular recipe has been in my family for a looonnnnggg time. I hope you enjoy it as much as we do!

Chicken and Broccoli Casserole

Cooked chicken (you can use 2 large cans of already cooked chicken or cook a couple of chicken breasts yourself and shred them or cut them into chucks)
Broccoli, partially cooked (you can use 32 oz of frozen broccoli or a couple of heads of fresh broccoli)
2 cups sharp cheddar cheese, grated
1/2 cup mayo
1 can cream of chicken soup
1 can cream of mushroom soup
onion powder to taste
garlic powder to taste
lemon juice to taste
salt and pepper to taste
1 sleeve of ritz crackers, crushed (I have also used cheeze-it's, goldfish, bread crumbs, etc.-you can't mess this up)

In a large bowl mix together chicken, soups, seasonings, mayo, and 1/3 of the cheese. Place partially cooked broccoli in the bottom of a large baking dish. Pour in chicken mixture and mix up well. Top with remainder of cheese and then crushed crackers. Bake on 350 until bubbly and a little brown on the top (about 25 minutes).
