Now that there is a touch of fall in the air, I can start sharing YUMMY recipes that are fabulous for fall and winter. I am a BIG lover of stews, soups, or anything that can be thrown in the crockpot and ready when I make it home from a busy day. That is surely the case with this recipe! I hope you enjoy!!!
Santa Fe Soup
1 to 1.5 lb ground beef or turkey
1 onion, diced
1 can diced tomatoes with liquid
1 can pinto beans with liquid
1 cup water
1 packet dry ranch dressing
1 can rotel
1 can black beans with liquid
1 can red beans with liquid
2 cans shoepeg corn, drained
1 packet taco seasoning
Brown meat and onion. Combine remaining ingredients and cook on high in crockpot for 2 hours or low on the stove for 2-3 hours. You can also cook on low in crockpot pretty much all day long. I usually do this! Serve with chips, cheese, and sour cream.
